Our Story

Byrnes' Bees is a part of Hartz Farm, a sixth-generation farm in suburban Chicago, Illinois. Through the course of six generations, Hartz Farm LLC now includes Byrnes' Bees. The Byrne family are enthusiastic beekeepers. Connor, Collin, and Bryce take great pride in their apiary, while their Mom, Lisa, runs the rest of the farm.


We place the health of our bees as a priority and use ethical, sustainable beekeeping practices. We strive to handcraft the highest quality and most delicious pure, raw honey. This honey is as natural as it gets and every container is poured by hand.


Our liquid honey in their purest form, straight from the hives to you. We use our best quality honey, as well as, the best quality ingredients to handcraft our amazing creamed and flavored honeys. 


The abundance of honey is heavily dependent on rainfall and the variety of forage. All honeys will vary in color, taste and viscosity. Even honey harvested in the same apiary will be unique. This is due to the bees choice and availability of forage. All raw honey will eventually crystallize, but different varieties and qualities will crystallize at different rates but it will never go bad.

The Bee Keepers

Connor, Collin & Bryce

The journey began in 2020, when their Mom, Lisa, decided to invest in some bees. Little did she know that her boys would fall in love with the bee biz and would soon take over the hives, and become some of the youngest and most successful apiaries around. The boys quickly gained experience through classes, books, research, and hands-on time with their 20 hives. Their experiences were invaluable, but nothing could prepare them for the great joy and satisfaction that beekeeping has brought to them.
